Ingredients
Chicken and Leek with Rice or made into a pie
- 1 --- leek, roughly sliced
- 1/2 --- carrot
- 1/2 --- zuchini, brocolli, peas or snow peas
- 1 cup --- corn kernels
- 30 grams garlic infused oil
- 500 grams chicken
- 200ml --- cream
- 75ml water
- 1 tablespoon TM stock
- 1 tablespoon cornflour

I'm cooking this todayRecipe's preparation
1. chop leek, carrot, and zuchini - place in TM and chop for 3 secs on 5
2. scrape down sides of bowl and pour in the oil cook for 3 mins on 100 speed 1
3. Add chicken diced and cook for 2 mins at 100 on reverse soft speed
4 Add stock, cream, water and cook for a further 10 mins at 100, reverse soft speed.
5. Add corn, conrflour and cook for 3 mins, varoma, reverse soft speed. mc off.
I then put into oven with puff pastry as a crust for 10 mins on 180.
It would also compliment steamed rice.

This was SO quick and easy and very tasty. We had it with rice and instead of cream I used coconut cream. I also added a couple of garlic cloves. My kids and hubby loved it... probably wouldn't rate the presentation of it, but it was intended for a pie filling! Such a good family meal for during the week. thank you
