Ingredients
Apricot masala cream
- 1 onion, halved
- 10 g olive oil
- 1 tbsp garam masala
- 200 g sundried apricots
- 50 g white wine vinegar
- 20 g apricot jam
- 300 g double cream
- salt and pepper to taste
Chicken frikadels with steamed rice
- 3 cloves garlic
- 500 g chicken breast fillets, skinless
- 1 bunch fresh coriander, leaves only
- salt and pepper to taste
- 400 g white rice
- 900 g water

Place onion into mixing bowl and chop 3 sec/speed 5.
Add garam masala and cook 3 min/Varoma/.
Add apricots, vinegar and apricot jam and cook 3 min/100C/speed 2.
Add cream and cook 10 min/100C/speed 2. Season to taste.
Blend 30 sec/speed 8, gradually increasing from speed 1 to 8 until the designed consistency is achieved.
Place garlic into mixing bowl and chop 5 sec/speed 10.
Add chicken and coriander and mince 20 sec/speed 6-7. Scrape down sides of bowl, season with salt and pepper to taste and mince a further 10 sec/speed 6-7 until desired consistency is achieved.
With wet hands, shape chicken mince into frikadels (little meatballs).
Place meatballs into Varoma tray and set aside.
Place rice into TM basket and rinse until water runs clear.
Place water into mixing bowl. Insert TM basket with rice. Place lid on mixing bowl and place Varoma dish and tray into position and cook 15-18 min/Varoma/speed 2 or until rice is cooked.
Remove Varoma. Using spatula, remove TM basket. Remove rice from TM fluff with a fork.
Serve chicken frikadels over steamed rice with Apricot masala cream.

This dish was created for ThermoFest '14.
This is quite a sweet dish and we recommend seasoning to taste.
Serve with your choice of steamed vegetables.

In the marsala cream, you only add the double cream without the water. We have amended the preparation.
