Ingredients

Sauce

  • 1 Brown Onion sliced
  • 500 grams chicken breast diced
  • 150 ml Coconut Milk
  • 3 heaped tbsp peanut buttter
  • 1 tsp crushed garlic
  • 1 tablespoons dark soy sauce
  • 1 tsp lime juice
  • 1 tsp dried chilli flakes
  • 3-4 tablespoons Kenjap manis (sweet soy sauce)
  • 1 tsp fish sauce
  • 1 tablespoon peanut oil
  • 3 tablespoons water

  1. 1. Add peanut oil, chicken and onion to mixing bowl

    2. Add all remaining ingredients

    For dipping sauce

    Skip step 1

    Chop onion 4sec/speed 4

    then add all other ingredients (except peanut oil) and cook 7 minutes/100C/Counter-clockwise operation"Counter-clockwise operation" 1

Tip

This sauce can be used as a marinade for chicken or basted on chicken for the BBQ!

 

For a darker spicier sauce add extra chilli flakes or substitute for a whole fresh chilli and add more dark soy

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Yum!  I have TM31 so I cooked the chicken on Varoma for 6:30 minutes for the first step but the rest of it worked and it turned out great.  Will be having this again!
