Ingredients

  • 2 cloves garlic
  • 1 leek, white part only, roughly chopped
  • 120 grams bacon, Chopped into 2cm pieces
  • 200 grams mushrooms diced
  • 1 tablespoon cornflour mixed to a paste with a little water
  • 200 gram chicken stock
  • 200 gram white wine, (or subsititute with more chicken stock for a Kid friendly meal)
  • 1 BBQ Chicken, Shreaded
  • 150 gram cream
  • 3-4 sheet puff pastry, ready-made
  • 1 egg
  • 1 bunch parsley
  • 15 gram Olive Oil or Butter

Recipe's preparation

    Filling
  1. Preheat oven to 180 degrees

    Place handful of parsley into thermomix and chop for 2-3 secs on speed 2

    Pour Parsley into a bowl and set aside - Don't worry about washing the left over parsley out

    Place Leek and garlic into thermomix bowl chop 15 secs/speed 6

    Add Bacon chop 5 secs/speed 2

    Add Olive oil (or butter) cook 5 min/100 degrees,Counter-clockwise operation"Counter-clockwise operation" , speed 1

    Add Mushrooms, chop 5 secs/speed 2

    Add shreaded chicken, cornflour paste,stock & wine. Cook 5 min,100 degrees,Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    Add cream, chopped parsley and salt and pepper to taste. Cook 2 min, 100 degrees,Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    Place the mixture into a bowl and place in the fridge until the mixture has cooled down completely

    In the meantime, get 4x ramekins or you can make this as 1 large pie

    Cut the puff pastry to line the base and sides.

    Divide mixture between all the ramekins and top with puff pastry

    Crack egg into a bowl and whisk, with a pastry brush top the egg mixture ontop of each pie

    Place in the oven for 20 min on 180 degrees or cook until puff pastry is cooked and brown

Tip

You can add any left over veggies to the mixture, eg: peas. You can also cook a chicken breast on the varoma instead of using a BBQ chicken.

    i've been looking for a healthy pot pie for longer than i'd like to admit! This one is absolutely beautiful! It's in the regular recipie book for sure!

    How many grams of chicken breast would you use if not using a BBQ chicken?

    Also what speed do you use to shred the chicken?

    Sorry I'm fairly new to using my Thermo.

    Love this idea to make into puff pastry triangles - GREAT IDEA!!!! Especially for parties, functions etc....

    I made this and my husband loved it. The best suprise is that my 7mth old loved it to. I pureed the pie filing and added some of her icecubed frozen veggies and she loved it. I am now making it just for her and freezing it in containers. So next time i need a chicken dish for her i know she'll eat it. Thank you
