Ingredients
- 350 grams Italian Arborio Rice
- 1 litre chicken stock
- 500 grams chicken breast, diced
- 2 cloves garlic
- 1 Spanish onion, peeled and quatered
- 50 grams Butter
- 150 grams pumpkin, peeled and chopped
- 100 grams baby spinach
- 150 grams feta cheese, crumbled
- 50 grams white wine
- 50 grams cream
- Salt and pepper, to taste
- water, for self-clean

Place pumpkin and 70g of stock in bowl. Cook for 10 minutes at 100 degrees on speed 1. Make sure pumpkin is cooked, then place in ThermoServe (or a bowl if you want an extra dish to wash) and set aside.
Add water into bowl and use self-clean method to remove pumpkin residue.
Place onions and garlic in bowl and chop for 5 seconds on speed 5. Scrape down sides and then add butter and sauté for 2 minutes at 100 degrees on reverse speed 1, with MC off.
Add rice and wine into bowl and sauté for 2 minutes at 100 degrees on reverse speed soft.
Add remaining stock and chicken. Cook for 15 minutes at 100 degrees on reverse speed soft.
Add pumpkin and mix for 2 minutes at 100 degrees on reverse speed 2.
Add half the spinach to the ThermoServe and the other half to the bowl and mix for 1 minute on reverse speed 3.
Add cream, salt and pepper and crumbled feta. Mix on reverse speed 5 for 10 seconds.
Place in ThermoServe and let stand for 10 minutes. Enjoy!

Dish dwas delicious, method was terrible.
After reading the comments about the pumpkin turning to puree I decided to skip step 1, roast the pumpkin in the oven and add it after the final step.
Also 15 minutes was no where near long enough to cook the aborio rice, it took 30 minutes. Otherwise, the ingredients were perfect and it tasted amazing.
This recipe has a nice flavour however the method is terrible. Also ended up with a very burnt bowl and the 10 second mix on speed 5 at the end purée's it, I would have had a very nice risotto if it weren't for this step.
This would have to be the best rissoto I have ever tasted added some bacon and didnt have any wine, added some peas also. Lovely, TY countess
YUM! this was huge hit in our family. question: is the pumpkin meant to be like a puree once cooked? or should it be chunky?
I agree with Prattles, I found the last 10 sec stir was a bit to much and next time was going to try just stiring it by hand instead.
Which part of step 3 did the burning happen? The rice and wine or rice and stock? The directions in part 3 are based on the risotto in the EDC. You can use the butterfly in step 3 to help stir. Just remember that you shouldn't go above speed 4 when the butterfly is in the machine.

I found that last stir on speed 5 reverse for 10 seconds was way too much. I had this beautiful risotto that turned into mush after that I think the recipe is great and it still tasted nice but texture wise it wasn't good at all after that last 10 seconds, I think next time I'd just stir with the spoon when I tip it out into the thermoserve. I will definitely make it again though, because other than that it was great.
OMG! This is so going to be my TM signature dish I loved this risotto recipe but found that I didn't need to add the whole litre of stock. Definitely going to be on the menu in our household again and again! Thanks for sharing
