Ingredients
Chili con Carne Risotto
- 30 grams Parmesan cheese
- 2 cloves garlic
- 1 onion, quartered
- 90 grams unsalted butter
- 100 grams tomato paste
- 2 teaspoons chili powder, ground
- 1 1/2 teaspoons cumin, ground
- 1/2 teaspoon cayenne pepper, ground
- 2 teaspoons paprika
- 400 grams tin tomatoes, diced, with chili seasoning
- 2 tablespoon Vegetable stock paste
- 500 grams Beef mince, (ground beef)
- 300 grams water, (300 mL)
- 250 grams arborio rice
- 1 can Black Beans, (~ 14 ounces)
- 1/2 bunch cilantro, chopped

- Place parmesan cheese into TM bowl and grate for 8-10 seconds on speed 9. Set aside.
- Place onion, garlic, and a handful of cilantro into the bowl and chop for 3 seconds at speed 6. "Closed lid"
- Add butter and saute on Varoma temperature for 4 minutes at speed 1. "Counter-clockwise operation" MC Off
- Add chili powder, cumin, cayenne, paprika, tomato paste, can of tomatoes, and vegetable stock paste to the bowl. Cook for 5 minutes at Varoma temperature at soft"Gentle stir setting" speed. "Counter-clockwise operation" MC Off
- Season mince (ground beef) to taste w/salt and pepper. Add to bowl and cook for 8 minutes on Varoma temperature at soft"Gentle stir setting" speed. "Counter-clockwise operation" MC Off
- Insert butterfly. Add rice and water to the bowl and cook for 20 minutes at 100 degrees at soft"Gentle stir setting" speed. "Counter-clockwise operation" "Closed lid"
- Add black beans to the bowl while it is still cooking (about 4-5 minutes before the risotto is done cooking).
- Place risotto into thermoserver, add parmesan cheese and mix well. Let rest for 5 minutes. Garnish with chopped cilantro.

Tip
You can alternatively use grated parmesan cheese instead of grating in the Thermomix at the start.
I like to season meat prior to using it. Therefore it is not an essential step if that is not your custom, however, it helps to bring out the flavors.
Add a can of corn towards the end of the cooking process to add vegetables and texture to the dish.
Definitely adjust spice to taste. We love spicy foods so this is good for us, but it can be a bit spicy for the little ones. Perhaps try just using the regular diced tin can of tomatoes (without the chili seasoning) and maybe omit or reduce the cayenne pepper.

Just made this for lunch for hubby and I. I’m not that over fussed on meat. You can’t taste the meat for the delicious flavours. Thank you for a fabulous recipe. We both really enjoyed it.

Made this twice now and both times turned out lovely. My daughter bought a thermomix after shes seen me using it so often and this was one of the first dishes we made together. We had heaps left over for lunches the next day.

Delicious, quick and easy. I used 50 grams of olive oil instead of butter and left out the chilli for the kids. We added some chipotle in adobe sauce to ours. Will definitely make this again

Loved it the taste is just amazing will be cooking this more often.. I just didn't add the chilli and used a normal tin of tomatoes my fussy eater miss 5 ate all of hers so it was a big hit
I reduced the spice a little for the kids and it was a hit. Loved the flavours!
