Ingredients
- 500 grams chicken tenderloins
- 250 grams rice, Long grain, white
- 1200 grams water
- 4 portions Mixed veggies of choice a good 1cup each of 4 veg!, I used carrot, broccoli and cauliflower,(1/2 cup each) and mushroom, but whatever you have
- 3 tablespoons crunchy peanut butter
- 2 tablespoons soy sauce
- 3 tablespoons honey
- 1 lemon, Juice only
- 2 cloves garlic, Minced
- 1 tablespoons curry powder

1. Mix peanut butter, soy sauce, lemon, garlic, honey and curry powder together in shallow dish and place chicken tenderloins in dish, coat with satay sauce and leave to marinate for minimum 30 minutes at best over night
2. Measure rice into simmering basket and rinse with water under tap, then place simmering basket into TM bowl.
4. Cut up veggies and place in bottom varoma tray.
5. Place a wet, scrunched piece of baking paper on top varoma tray, being careful not to cover all holes, to allow steam through to cook chicken.
6. Place marinated chicken tenderloins on baking paper and any remaining satay sauce on top.
7. Place varoma trays on TM bowl and cook for 35mins/varoma/speed 4.
8. Remove rice and check if chicken is cooked through. Cook chicken for a few more minutes on same temp above if not cooked.

So easy, thanks. I added some chilli and more curry powder, also a tin of coconut milk, was delicious, and, so easy. Because I doubled it, I cooked it all low and slow in casserole dish on stove top, blanching veggies first and adding later, when chicken is almost done.

Def only 20min cooking time, I even add my vegies after first 10mins
The cooking time needs to be reduced as rice is way over cooked and I found the chicken satay flavor wasn’t great - a little flavorless and plain.

I was so pleased to see this recipe after the original was removed, so thank you for posting it. I only cooked for 20 minutes though previously and cooked chicken a little longer if needed. The rice and veggies I kept warm in a thermo server while I did this.
