Ingredients

Sauce

  • 1 onion, halved
  • 2 garlic cloves
  • 30g oil
  • 120g crunchy peanut butter
  • 200g water
  • 1 tablespoon TM vegetable stock
  • 90g honey
  • 40g grainy mustard
  • 2 teaspoons curry powder
  • a few dashes Tabasco sauce, (to taste)
  • 2 pinches ground cardamon
  • 500g chicken thighs, diced

Recipe's preparation

  1. 1. Add onion, garlic and oil to the bowl, chop for 3 seconds, speed 7.

    2. Sauté for 3 mins, 120 degrees or Varoma, speed 1.

    3. Add all other ingredients, with the chicken last.

    4. Cook for 12-15 minutes, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" , speed soft. Leave the MC off if you want the sauce to reduce more.

Tip

Serve with rice and vegetables.

This sauce is very versitile, you can use beef, prawns or vegetables in place of chicken. You can cook the sauce by itself and pour over things instead of cooking veggies/beef/chicken in it. I would just cook it for about 5 minutes to reduce and mix all the flavours together.

You can also increase the quantity of chicken, ensuring you don't go over the maximum line inside your Thermomix bowl. Chicken breast also works well.

It freezes very well. And my kids love it!

This is a great mid-week meal, something to get on the table quickly.

    I've made this many times and it is an absolute hit with everyonetmrc_emoticons.-).
    I replaced 200ml water with 200ml coconut milk.
    Instead of 90ml honey I use 45ml honey & 45ml Sweet Chilli Sauce.
    Add a tin of water chestnuts 10 minutes before the end of cooking.

    So easy and delicious! I use a 270ml tin of lite coconut milk instead of the water and omit the tabasco. I halve the curry powder. My kids and hubby love it!

    I loved this recipe. I didn't have Tabasco sauce and didn't replace. 6 min from the end I added a hand full of cut up fresh beans and half a small chopped capsicum. I also used 500g of sliced chicken breast. The consistency was perfect! Thank you 😊

    Delicious! I added a touch too much Tabasco but next time I'll be more careful! I made it the night before and let it sit overnight in the fridge and it was wonderful

    Such a delicious dinner! My husband and I were almost licking our bowls by the end of it. I added peas and green beans to sauce and a little cornflour to thicken it up. Very impressed with the flavours.

    Added 1/4 each of sliced red capsicum & yellow capsicum, handful of mixed snow peas and sugar snap peas & roughly cut most of a cooked chicken. Served on bed of basmati rice. Delicious.
