Ingredients

Meatballs

  • 2 spring onions, trimmed
  • 1 cloves garlic
  • 2 Small zucchinis, Cut in pieces
  • 1 heaped teaspoon Dried Oregano Leaves
  • 1 heaped teaspoon dried basil
  • 500 g pork, beef or veal mince, Can be a mixture
  • 100 g low fat feta, broken into smaller chunks
  • salt and pepper to taste

Sauce

  • 360 g Passatta
  • 200 g vege stock, (1 cup)
  • 1 onion, cut in half
  • 2 cloves garlic
  • salt and pepper to taste
  • olive oil

Cous cous to serve

  • 180 gram cous cous
  • 1 lemon, Use rind and juice of half a lemon
  • 2 heaped tablespoons fresh mint leaves, chopped (optional)

Recipe's preparation

    Making the meatballs
  1. Place spring onion, garlic, zucchinis in bowl. Chop 5 seconds speed 5. Repeat if needed
  2. Add mince, feta, and seasonings. Speed 1, 40 secs, Counter-clockwise operation"Counter-clockwise operation" - add a little more time if not combined enough.
  3. Shape mixture into small meatballs and place in both the Varoma tray and dish leaving small holes to ensure they cook evenly.
  4. Cooking
  5. Place onion and garlic for sauce in TM bowl, 3 secs, speed 7 - repeat if needed. Add a dash of olive oil and cook 2 mins, 120 deg, speed 2.

    Add the passatta and stock to the bowl
  6. Put the Varoma into place and cook for 20 mins Varoma temperature, speed 2.
  7. In the meantime, add 200ml of boiling water to cous cous and cover. Let stand for 5 minutes then fluff up with fork and add mint, lemon juice and lemon rind
  8. Serving
  9. Check the meatballs are cooked, if not add a little extra cooking time.

    Serve meatballs on cous cous and pour over sauce. Yum!

Healthy Meatballs with Cous Cous

    These had a really nice flavour and the cous cous made the meal lovely and light compared to the tradional pasta.  I used fresh herbs from the garden instead of dried and beef mince. I did have to simmer the sauce for about 15 minutes to thicken it up.
