Ingredients

  • 2 tablespoons EVOO (extra virgin olive oil)
  • 500 grams Veal mince
  • 500 grams pork mince
  • 1 --- large brown onion, cut into quarters
  • 2 cloves garlic
  • 1 --- large carrot, quartered
  • 1/2 --- red capsicum chopped
  • 1 --- large zucchini, chopped
  • 1 tablespoon basil
  • 1/4 bunch parsley
  • 400 grams tomatoes chopped
  • 700 grams Passata
  • 2 tablespoons tomato paste
  • 2 tablespoons tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 5 drops Tabasco sauce
  • 40 grams sweet sherry
  • 5 --- Button Mushrooms chopped
  • 1 --- bay leaf
  • 5 pinches Mixed Herbs dried
  • Salt and pepper

Garnish

  • Shaved parmesan cheese

Recipe's preparation

  1. Add onion and garlic to Closed lid"Closed lid" . Chop for 10 seconds, speed 8

  2. Scrape down sides of Closed lid"Closed lid" with spatula.

    Add EVOO and sauté for 2 mins, varoma temp, speed 2

  3. Add all ingredients to Closed lid"Closed lid" except mince. 

    Place mince into varoma and position on top of Closed lid"Closed lid" .

    Cook for 15 mins, varoma temp, speed 3

  4. Break mince up with spatula.

    Cook for another 15 mins, varoma temp, speed 3.

  5. Blitz sauce for 10 seconds, speed 6

    Check consistency - make sure vegies are chopped finely 

  6. Decant half of the sauce into thermoserver. Add mince to Closed lid"Closed lid" . Stir for 1 min,  Counter-clockwise operation"Counter-clockwise operation" , speed 2

  7. Empty this mixture into thermoserver and combine with previous sauce.

    Serve atop your favourite pasta with shaved Parmesan cheese

    Very tasty bolognaise sauce. Didn't have a red capsicum so left that out. I think this recipe would also be really nice without meat as a vegetarian sauce.
