Manadonese Pig's Trotter w/ Red Beans Soup by @levi_nathania

  • 300 grams Pig's Trotter
  • 1700 grams Drinking water
  • 200 grams Red Beans, soaked overnight
  • 7 pieces shallots
  • 5 cloves garlic
  • 1.5 tablespoon margarine
  • 1/2 piece whole nutmeg
  • 1/8 teaspoon ground white pepper
  • 2 teaspoons salt
  • 1.5 teaspoon Mushroom Bouillon
  • 1 teaspoon chicken powder
  • 2 stalks celery leaf
  • 4 pieces cloves
  • 1000 grams Drinking water, for blanching
  • blanched pig's trotters

Recipe's preparation

  1. Insert 300 grams Pig's Trotter, and add around 1000 grams drinking water (make sure all pig's trotters are covered with water). Blanch 15 min / 50 C / reverse / sp. spoon
  2. Strain the pig's trotters with simmering basket (you may rinse the bowl to remove the odors).
  3. Add 1700 grams drinking water. Then kettle mode 100 C
  4. Add the blanched pig's trotters back in. Also add 200 grams Red Beans. Cook 95 min / 100 C / reverse / sp. spoon
  5. Switch to another bowl, set the Thermomix cutter up, and thinly slice 7 pieces shallots, and 5 cloves garlic.
  6. Take the cutter off, and add 1.5 tablespoons Margarine on the bottom of the bowl. Then add the sliced garlic & shallots. Sautee 4 min / 120 C / sp. 1
  7. Add the sauteed garlic to the other bowl with the soup. Also add 1/2 piece whole nutmeg, 1/8 teaspoon ground white pepper, 2 teaspoons salt, 1.5 teaspoon mushroom bouillon, 1 teaspoon chicken powder, 2 stalks celery, 4 pieces cloves. Cook 15 min / 100 C / reverse / sp. spoon
