Ingredients

Mango Chicken

  • x2 420 grams cans mango slices in syrup (drained)
  • 120 g coconut milk/cream
  • 1 Brown onion, quartered
  • 2 garlic cloves
  • 2 tbsp TMX vegetable stock concentrate
  • pinch ginger ground
  • 1 tbsp garam masala, powder, (I used homemade)
  • 1 tsp tumeric powder
  • 2 tsp Coriander leaves, dried
  • 600 g chicken breast, cut into thick cubes
  • 300 g frozen vegetables, thawed
  • 30 g olive oil

Rice

  • 250 grams jasmine or basmati rice

Recipe's preparation

    Mango Chicken Curry
  1. 1. Add 1 can of drained mango slices, coconut milk/cream and 1 tbsp TMX stock to Closed lid and blend 10 seconds/speed 7 or until smooth.  Set aside


     


    2. Into clean Closed lid add onion and garlic and chop 3 seconds/speed 7


     


    3. Add oil, spices and 1 tbsp TMX stock to Closed lid, saute 2 mins/Varoma/speed 1 


     


    4. Add chicken to Closed lid and cook 15 mins/100 degrees/counter-clockwise operation/Gentle stir setting


     


     5. Add vegetables and mango puree to Closed lid and cook with MC off, 15 minutes/100 degrees/counter-clockwise operation/Gentle stir setting


     


    6. Set aside in thermoserver


     


    7. Dice reserved tin of mangos and add to thermoserver


     


    8. Cook rice with TM basket as per the Everyday Cookbook

Tip

If the chicken is diced too small, the chicken will loose its texture and become shredded

    Wow! Yum!
    Tried this tonight but swapped the tinned mango for fresh (defrosted) flesh from my wonderful mango tree. And I put the whole lot in at the first step as I wasn't fussed about having chunky bits.
    i think this might be my new favorite recipe!

    This is probably my all time favourite thermomix recipe!
    i love love love it!
    i do change a couple of things. I don’t add frozen veggies, but instead serve fresh steamed veggies on the side.
    Also no coriander or ginger.
    And lastly I purée both tins of mango in the first step as I don’t like chunks.
    I make this nearly weekly, SO good!!

    This was really simple, great taste, and my kids LOVED it. However my husband who doesn’t like any curry, hated it! Not to worry, it was a huge winner in my books simply because 2 of 3 kids ate all that was on their plate, then asked for more! Doubled the chicken, cooked for longer. Steamed fresh veg in varoma basket while cooking rice. Served with roti. Delicious. Can’t wait for lunch tomorrow!

    This was absolutely amazing! Mr 4 and Mr 2 devoured it, and even the 10 month old loved it!

    Will definately be making this again.
    I used 500g of fresh mango instead of the tin of mango slices, as we had surplus mangoes, but look forward to trying it with the tin when we can't get cheap mango.

    One can of mangoes, gave me 255g flesh drained for reference. I used a can for the puree and then about 1.5 fresh mangoes diced to stir through. Great recipe, which my kids loved. I used up some of the coconut cream with water in the unwashed bowl which gave a delicious Coconut Curry Rice too. Poured the curry onto raw beans in the Thermoserver which cooked them perfectly by the time rice was cooked.

    Yum, Yum & Yum tmrc_emoticons.). I half the recipe as it was only for 2 people. I also used frozen mango and without the chicken. I will be making this again..
