Ingredients
Cauliflower Rice
- 1 small Cauliflower, roughly chopped
- 3 sprigs Coriander (fresh)
- 5 sprigs chives (fresh)
- 40 grams olive oil
- pinch salt & pepper
Butter Chicken
- 1 brown onion, cut into halves
- 2 cloves garlic
- 1 cube fresh ginger
- 100 grams Ghee
- 2 teaspoons garam masala
- 1 teaspoon ground cardamom
- 1 teaspoon Ground Coriander
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- chili flakes, optional
- 120 grams tomato paste
- 2 tablespoons lemon juice or white wine vinegar
- 1 can coconut cream
- 700 grams chicken thigh, cut into bite sized pieces
- fresh coriander and lemon, to garnish

Place cauliflower and herbs into mixing bowl and chop 7 sec/speed 6 or until cauliflower is chopped into rice sized pieces.
Add oil and S&P, saute 5min/100C/"Counter-clockwise operation" /speed 1.
Place in Thermoserver. (No need to wash your bowl for Butter Chicken)
Place onion, garlic & ginger into mixing bowl, chop 4 sec/speed 7. Scape down sides of the bowl.
Add ghee and saute 3 min/ 120C/ speed 1.
Add all spices and saute for an additional 30sec/120C/speed 1.
Add all remaining ingredients (tomato paste, lemon juice, cream & chicken) cook 16 min/100C/"Counter-clockwise operation" /speed 1.
Serve in Thermoserver with Cauliflower Rice and garnish with fresh coriander and lemon wedge.

Tip
For more spice add 1-2 pinches cayenne pepper.
To sweeten dish, add 1-2 tablespoons of Maple Syrup.
For a richer butter chicken more butter or ghee could be added.

Good flavour and would make again. I used a 400ml can of coconut cream - will use a smaller can next time. I agree with the comment on the cauliflower, mine was a bit too processed. Wish I'd have read the comments first! I'm new to this and just go on the number of stars!

I made cauliflower mush the first time.. Next time, i'll try 3 seconds/ "Counter-clockwise operation" speed 5 on the TM5, it ends up looking more like rice size pieces and cooking it in the Varoma - based on Tim Rombards cauliflower pilaf recipe.
Tried this for the first time and we both just loved it. Definately adding to my favourites
