Ingredients

Shepherds Pie

  • 1 tsp Ghee
  • 1 medium brown onion
  • 2 carrots, cut into 3-4cm pieces
  • 2 stalks Celery, cut into 3-4cm pieces
  • 1 zuchinni, cut into 3-4cm pieces
  • 80 grams frozen green peas
  • 5 garlic cloves,crushed
  • 500g Beef mince
  • 2 spring thyme
  • 1Cup beef stock, Home made if you can.
  • 2 tbsp red wine vinegar
  • 1 tbsp tomato paste, Home made if you can.
  • 1 bay leaf
  • 700 grams Sweet Potato Mash
  • Coconut Oil Spray

Recipe's preparation

  1. Prehead oven to 180 degrees. Spray a deep- sided baking dish (22cm) with coconut oil. Make your sweet potato mash and set aside. 

  2. Place carrot, Celery and zuchinni into mixing bowl and chop 3-5sec/speed 5. Scrape down sides and repeat if needed. Add Frozen Peas and set aside. 

  3. Place Garlic & brown onion into cleaned mixing bowl and chop 3-5sec/speed 6. Scrape down sides with spatula. 

  4. Add Ghee, Thyme and bay leaf and sautè 3min/120/speed 1

  5. Add carrot, celery, zuchinni and peas into mixture and sautè 3min/120/speed 1.

  6. Add beef mince and cook 5min/100/Counter-clockwise operation"Counter-clockwise operation" /speed 1. (Make sure your mince is broken up)

  7. Add stock, vinigar & tomato paste 5mins/100/speed 1. 

  8. Stir through 1/3 sweet potato mash ( this will act as a thickener)  

  9. Pour into prepared baking dish and top with left over sweet potato mash. Bake for 25-30mins (180degrees) or until potato is lightly browned.

  10. Allow to rest 5 minutes prior to serving. 

Tip

With the sweet potato mash I just follow the Mashed potatoes recipie in The Basic Cook Book ( page 198 ) But to keep it paleo just add sweet potato, coconut milk and nutmeg.

    This meal is delicious and very tasty. Even my fussy children enjoyed it. However it was too sloppy even though I omitted the 1 cup of stock (I used a tablespoon of vegetable concentrate instead). I will try this again and reduce the coconut milk in the mash and see how it goes.

    Wow. Mine turned out awesome. With my sweet potato mash I used the varoma to cook them and then pulsed with some grass fed butter. Found it to be nice and thick. That was the mixture was perfect when i added a third. Thanks for this recipe it was amazing... Cooking 1

    Thank you ladies for your comments about the sloppy potatoes. I used 200 grams of soy milk instead of 250 grams and a little less than a cup of stock and it was delicious.

    Not sure where I went wrong, but this recipe came out as complete slop.

    The potato sank into the meat before I put it in the oven, and the whole thing has come out even sloppier.

    So disappointed tmrc_emoticons.(

    This should be called cottage pie, as it uses beef, shepherds pie uses lamb!
