  • 400-600 gram BBQ Chicken, cut into bite sized pieces
  • 2 tbsp coconut cream
  • 1 tbsp cornflour
  • 100 gram Pineapple, cut into bite sized pieces
  • 12 cherry tomatoes, halved
  • 2 tbsp fish sauce
  • 30 gram brown sugar
  • 4 Kaffir lime leaves
  • 1 lime, juiced
  • 20 Thai basil leaves

Recipe's preparation

  1. 1.  Place Red Thai curry paste, coconut milk and 100g water cook 2mins/Varoma/Speed 1

    2.  Add coconut cream, cornflour, kaffir lime leaves, cherry tomatoes cook 6mins/100c/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

    3.  Add sugar,fish sauce, lime juice, pineapple 2mins/Varoma/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

    4.  Add basil leaves,bbq chicken and 40g water 3mins/Varoma/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

    Garnish with coriander and serve with rice or egg noodles

    This was a hit with everyone!! I didnt have coconut milk/cream so used 400mls of water with a TBSP of veggie stock plus some extra veggies that I had on hand - mushrooms, red capsicum and broccoli.

    Quick and easy week night meal. I cooked this on a busy weeknight and it comfortably fed six people combined with noodles. I used some leftover pineapple and the dregs of a laksa paste jar, worked well. Thank you for posting!
