Ingredients

  • 150 g Tasy Cheddar, cubed
  • 1 Medium Brown Onion, halved
  • 2 cloves garlic
  • 150 g Frozen Corn Kernals (can use canned but will give a different flavour)
  • 150 g Frozen peas and corn
  • 150 g Carrot, small diced the same size as corn kernals
  • 400 g Corned Beef, cubed (use up to 500g, whatever you have left over)
  • 250 g Milk
  • 2 eggs
  • 150 g Self Raising Flour
  • 1 tbsp veggie stock concentrate

Recipe's preparation

  1. 1)  Grate cheese, speed 8 for 3-4 seconds. Remove from bowl, but no need to clean.

     

    2) Grate onion and garlic, speed 8, 3 seconds. Add veggie stock and oil and cook 100C, 2 minutes, speed 2.

     

    3) Add remaining ingredients, and mix 20-30 seconds, Counter-clockwise operation"Counter-clockwise operation" speed 3, using the spatula to help incorporate.

     

    4) Fry in a small amount of butter until medium golden brown on each side.

Tip

We serve these with the Brocoli Salad from the EDC for a tasy, healthy, light meal.

If you want to 'hide' your veg a little more, you can grate the carrot down with the onion and garlic and cook. This will make the carrots softer as well, as in my original method they stay fairly firm (I hate soggy veg!).

These also make great finger food if you cube the beef a little smaller and make them bite size.

    Great simple recipe that works everytime, I'm a little lazy and just buy the cubed carrots,corn and pea mix instead. tmrc_emoticons.)

    Made these last night for dinner nice taste to them but a bit soft in the middle. There was heaps of mixture left over so I'm going to make sausage rolls out of it today tmrc_emoticons.-)
