Ingredients

Crust

  • 30g parmesan
  • 180g sour dough bread cubed
  • 30g sundried tomatoes
  • small handful Italian Parsley
  • small handful basil leaves
  • 25g olive oil
  • 2 Tbsp Djon Mustard
  • 4 lamb racks

Accompaniements

  • 500g Kumara (orange)
  • 250G Green Beans
  • 15g Butter
  • salt and pepper to taste

Recipe's preparation

  1. Preheat oven to 200 Degrees C

     

    Place cubed parmesan in Thermomix and  grate 10 seconds/ speed 8 . Set aside

     

     

    Place  cubed bread in TM and process 10 seconds / Speed 8 to a coarse crumb

     

    Add parsley, basil and, sundried tomatoes. Turbo 1 second - 3 times

    Return parmesan and add oil to TM bowl. Turbo 2 seconds.

     

    Season Lamb racks with salt and pepper. Spread djon mustard on each lamb rack. Press the crumb firmly onto each lamb rack.

     

    Roast 25 minutes for medium  or cooked to your liking. Rest for 10 minutes.

     

    While Lamb is roasting prepare vegetables.

     

    Place 900g water in TM bowl and cubed kumara in basket. Cook 15 minutes/ 100 degrees/ Speed 3 

     

    Place Green beans in top Varoma dish and with Kumara still cooking in basket cook 10 minutes/ Varoma / Speed 2.

     

    Insert Spatula into basket, discard water and place Kumara in TM bowl. Blend 10 seconds / Speed 6. Place butterfly in Tm bowl and mash 1 minute/ Speed 3. Add butter during process along with salt and pepper to taste.

     

    Cut lamb racks into serving size portions and serve with  kumara mash and steamed green beans.

Tip

You can vary the amount of sundried tomatoes depending on taste.

The parmesan makes the crust crunchy

    Great way to celebrate Waitangi Day.  Love the crumb with the addition of parmeasan and sundried tomatoes, with the smooth texture of Kumara mash.
