Ingredients

pizza dough

  • 230 grams rice, raw
  • 170 grams potato flour
  • 60 grams tapioca flour
  • 2 teaspoons xanthan gum, or use all chia seeds
  • 1 tablespoon chia seeds
  • 1/2 teaspoon salt
  • 2 teaspoons castor sugar, can use raw sugar and add to rice to grind
  • 3 teaspoons Yeast
  • 2 tablespoons olive oil
  • 200 grams hand hot water, half cold water and half boiling works

Recipe's preparation

  1. add rice to TM bowl (add raw sugar if using instead of castor sugar). Grind 1min, speed 9 (use paper towel under MC to stop bits flying out)

    Add all other dry ingredients. Blend 10 secs, speed 5-6

    Add oil and water. put on Closed lid"Closed lid" and kneadDough mode"Dough mode" for 2 mins.

    Transfer to a work surface dusted with GF cornflour.

    Divide into 2 or 3 portions. Roll each portion to a thin 30cm diameter pizza base. Place  on baking paper lined trays and allow to rise for 20mins.

    Preheat oven to 220 C

    Add your favourite toppings and cook 18-20mins

Tip

If you only need one pizza base at a time you can freeze the others. Just  bake the base for 10mins, let it cool and wrap in foil.  They defrost quickly when needed
