Ingredients

Ricotta Spelt Gnocchi

  • 500 g Fresh ricotta
  • 100 g Parmesan cheese, grated in TM
  • 2 Eggs, Large
  • 1 tsp salt
  • 150 g spelt flour
  • Large Pot of Boiling Water

Recipe's preparation

    Gnocchi
  1. place all ingredients into TM bowl and mix on speed 4 until all combined.

    Do not overwork as the gnocchi will turn out dense.

    Add more flour if the dough is too sticky, some days I even have to double it as the ricotta is very wet.

    Turn dough out onto silicon mat and divied into 4.

    Take 1 portion and roll into a 2 cm diameter log the cut of little nuggets of gnocchi with your spatula.

    Sprinkle with flour if setting aside (may be frozen at this stage) or pop straight into boiling water to cook.

    Gnocchi is cooked when it floats to the top, approx 2 mins.

    Continue process with remaining portions.

    I use my Roasted Pumpkin and Cashew Hommus Dip as a sauce for this just by adding more olive oil and lemon juice to loosen it.

    We have just gone wheat free and I was looking for a recipe to replace the Thermomix Australia one I love so much. This was perfect! I used 200g of spelt from the outset to be sure and kneaded for 2 min as per the other poster's advice. Thank you for the recipe!
