Ingredients
Cauliflower and Yellow Lentil Curry
- 1 onion, peeled and quartered
- 3 cloves garlic
- 20 grams ginger
- 40 grams Butter
- 2 teaspoons curry powder
- 1 teaspoon Mustard seeds
- 1 teaspoon cumin seeds, OR 1/2 teaspoon cumin powder
- 1.5 litres water
- 100 grams TM vegetable stock
- 1 packet of yellow lentils, (375 grams)
- 1 cauliflower head, small
- 1 bunch coriander

Place onion, garlic and ginger in TM bowl and chop for 5 seconds on speed 7.
Add oil, curry powder, mustard seeds and cumin and sauté 3 minutes at 100oC on speed 1.
Add water, vegetable stock and salt and pepper and cook for 5 minutes at 100 oC on speed 1.
Add yellow lentils and cook for 10 minutes at 100 oC on speed 1.
Chop cauliflower into bite size pieces while lentils are cooking and place them into the slow cooker.
Add cooked lentils mix to slow cooker and cook on High for 4 hours or Low for 8 hours.
Garnish with coriander and serve with pappadums.

This recipe can be vamped up with whatever vegetables you fancy.
Tastes great the next day.

Super easy!
Tasty, right amount of spice and easy cooking it in the slow cooker. I also added carrots and big mushrooms.
