Ingredients

FODMAP friendly Eggplant Curry22

  • 2 Eggplant (large)
  • 900 g water
  • salt
  • 5 g red chili, Less or more to taste
  • 5 g chives
  • 10 g Ginger (fresh)
  • 1 tablespoon garlic infused olive oil
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon ground tumeric
  • 400 g Can tomatoes1/2
  • 1/2 Lemon (juiced)
  • fresh coriander

Recipe's preparation

  1. Slice eggplant into rounds (about 3-5mm thick), sprinkle with salt, place in Varoma dish and tray ensuring steam can circulate.
    Steam 10min/varoma/speed 1

  2. Set aside to cool then cut into quarters.

    Empty, rinse a dry mixing bowl.

  3. Add chili, chives and ginger to the mixing bowl.
    Chop 10sec/speed 9
    Scrape down sides of bowl if needed.
    Add oil.
    Saute 2mins/100 degrees/speed 4

  4. Add spices, eggplant and tomatoes.
    Cook 10mins/100 degrees/speed 1 reverse

  5. Serve with fresh coriander.
    You can also add lactose free yoghurt.

    Quick & easy to make. I did not have 2 eggplants so I use 1 eggplant and a medium size sweet potato. Delicious & morish, served with rice.

    Delicious eggplant curry! I used a whole tin of tomatoes. At the end I added a tin of drained chickpeas and then cooked it for another 10 mins as the eggplant wasn't soft enough. I served it with rice and topped with dry roasted cashews, coriander and coconut yoghurt.

    Pretty tasteless dish, unfortunately. It needed a lot more spices or herbs. Sorry but I won't be making this again.

    Love eggplant so will definitely try this; do you use the whole tin of tomatoes or just half?
