Ingredients
Cashew Cream
- 400 g cashew nuts, soaked for 4 hours+
- 1/4 cup lemon juice
- 1 tablespoons soy sauce
- 150ml water
Quinoa
- 260 g quinoa, any colour
- 1/4 cup lemon juice
- 600ml water
- salt
- pepper
Guacamole
- 2 Avocados
- 1 tomato
- 3-4 slice pickled jalapeno, to taste
- 1 bunch coriander
- 3 tbsp lime juice
- salt and pepper to taste
Salsa
- 3 tomatoes
- 1 tbsp lime juice
- 3 tbsp olive oil
- Salt and pepper
Beans
- 2 cans black or red kidney beans, drained
- 3 cloves garlic
- olive oil
- salt

Rinse the quinoa.
Cook in a rice cooker or on the stovetop with 600ml of water and the salt, pepper and lemon juice.
Chop the tomatoes 6 sec / speed 5.
Add lime juice, olive oil, salt and pepper. Mix 10 sec / speed 3.
Refrigerate.
Chop the garlic 7 sec/speed 7, scrape into frying pan
Add the beans, some olive oil and salt and heat, stirring occasionally.
(No need to clean the bowl)
Chop coriander 7 sec / speed 7
Chop tomatoes and jalapeño 6 sec / speed 5
Add the rest of the ingredients and mix 10-20 sec / speed 3-4 until combined
Put in a bowl and set aside.
(no need to clean the bowl)
Blend all ingredients together 1 minute / speed 9.
Put quinoa in the bowl. Add the guacamole, cashew cream, salsa and beans on top.

Tip
You can probably use any type of bean and sub the quinoa for rice if you want though I haven't personally tried it.
For gluten free option replace soy sauce with tamari or use gluten free soy sauce, or simply omit and add extra salt.
