Ingredients
Loaf
- 210 g green lentils, (one cup)
- 125 g walnuts, finely chopped and toasted
- 3 tbsp Ground Flax Seed, (or whole chia seed)
- 3 clove garlic
- 350 g red onion
- 100 g Celery
- 125 g carrot
- 30 g apple
- 50 g raisins
- 125 g breadcrumbs
- 0.75 tsp dried thyme, (or 2 tsp fresh)
- 60 g flour, (mill 60g gf oats for gluten free)
Balsamic Apple Glaze
- 60 g ketchup
- 1 tbsp Maple syrup
- 2 tbsp Applesauce
- 2 tbsp balsamic vinegar

The lentils need to be overcooked.
Put the 210g of lentils into the TMX. Add 3 cups (750g) water or vegetable stock.
Cook on VAROMA / 45 mins / speed soft (MC off)
Toast the walnuts at 160 C for about 10 minutes. Set aside.
Increase the oven to 175 C.
Whisk the ground flax or whole chia seeds with half a cup of water in a small bowl and set aside.
Once the lentils are finished cooking, drain them and set aside.
Clean the TMX bowl.
Then prepare the vegetables:
Put the celery, carrot, and apple into the bowl. Chop 10 sec / speed 5 / reverse or until grated. Set aside. (No need to clean the bowl, just try to get most of the stuff out)
Add the garlic. Dice 7 sec / speed 7.
Add the onion. Dice 5 sec / speed 4.5
With the garlic and onion in the bowl from the previous step, sautee 10 minutes / VAROMA / speed 2 in oil.
Add the celery / carrot / apple mixture and the 50g of raisins. Cook 98 degrees / 5 minutes / speed 2.
Add the rest of the ingredients and mix on speed 3 or until combined.
Grease a loaf pan or muffin tin and put the mixture in.
Whisk the glaze ingredients together in a bowl with a fork and put about half of it on top (save the rest for a sauce after it's cooked)
Bake for about 50 minutes (less if you're doing individual portions in a muffin tin). Cool in the pan for at least 10 minutes before serving.
