- 2 garlic cloves
- 300 grams Aborio Rice
- 300 grams pumpkin, cubed
- 1 heaped tablespoon TM Veggie Stock
- 850 grams water
- 60-80 grams good quality goats fetta, to taste
- 100 grams spinach leaves, fresh
- 20 grams parmasan cheese, optional
- 80 grams white wine, optional
- 40 grams olive oil, or rice bran

1. If using parmasan cheese, drop it in the the mixing bowl, 5 seconds / speed 8. Set aside.
2. If you like your spinach chopped, chop it now, 5 seconds, speed 5. Set aside.
if you prefer leafy, whole spinach leave until the end.
3. Place garlic in the TM bowl, and chop 3 seconds, speed 5.
4. Add rice and oil and fry 3 mins, 100 degrees, speed 1
5. Add. pumpkin, stock, water (and wine if using). Cook 16 minutes, 100 degrees, reverse "Counter-clockwise operation" , speed soft "Gentle stir setting"
6. Using the spatular, give the risotto a quick mix making sure to move the risotto carefully from the bottom of the bowl to the top
7. Add goats fetta, parmasan cheese (can add when serving instead if you prefer) and chopped spinach (if you want leafy spinach, wait until step 8 to add). Cook 2 mins, 100 degrees, reverse "Counter-clockwise operation" , speed soft "Gentle stir setting" .
8. Let stand for 10 minutes in the TM bowl. If using leafy spinach, fold it into the risotto now.

* This can be FODMAPs friendly, by taking out the garlic, and replacing with herbs and spices of choice
* this can be dairy free by taking out the cheese, its pretty good without anyway!

Loved this recipe, also didn't use parmasen and it turned out great!
Great recipe! I didn't add Parmesan so added extra tablespoon of veg concentrate. Also risotto turned out bit gluggy so maybe it needs to be cooked with the butterfly like the risotto in the EDC.
