Ingredients

Quick carrot dhal

Dhal

  • 200 g red lentils
  • 2 clove garlic
  • 1 green chilli, (optional)
  • 4 centimetres fresh ginger
  • 1 red onion
  • 1 tablespoons oil
  • 1 level teaspoons ground turmeric, or 1 inch fresh turmeric root
  • 1 level teaspoons cumin seeds
  • 1 level teaspoons coriander seeds, or 1/2 teaspoon ground coriander
  • 1 level teaspoons black mustard seeds
  • 1 level teaspoons ground cinnamon
  • 1 can coconut milk, 400ml
  • 2.5 level tablespoons Vegetable stock paste, Or 600ml vegetable stock
  • 6 carrots, Peeled
  • 2 bunch spinach, Chopped/ torn
  • 1 lemon
  • 0.5 bunches fresh coriander

Recipe's preparation

  1. Weigh lentils then rinse well and set aside.
    Add garlic, chilli and ginger (and turmeric root, if using instead of ground turmeric) to Closed lid"Closed lid" . Chop 3 seconds speed 7.
    Add onion, quartered. 5 seconds speed 5. Scrape bowl.
    Add a glug of oil and cook 2 minutes 100°C Counter-clockwise operation"Counter-clockwise operation" 2.
    Crush coriander seeds slightly with the flat side of a knife or mortar and pestle. Add all spices to Closed lid"Closed lid" . Cook for a further 2 minutes 100°C Counter-clockwise operation"Counter-clockwise operation" 2.
    Add chopped carrots. Grate 5 seconds speed 6.
    Add lentils, coconut milk, stock paste and 500g water. Cook 20 minutes 100°C Counter-clockwise operation"Counter-clockwise operation" 2.5.
    Stir in spinach, lemon juice and coriander leaves.

  2. Serve with yoghurt, poppadoms, brown basmati rice. Sprinkle with chopped chilli and garam masala if you want more oomph.

    sonlou: yay, glad you enjoyed it! I think it has so much more fresh yummy flavours than some other dhals, and so healthy with all those carrots.
