Ingredients
- 500 g spelt flour
- 250 g lukewarm water
- 1 sachet dry yeast
- 20 g olive oil
- salt

- 2 zuchinnis, thinly sliced
- Fetta Cheese
- chilli flakes, dried
- lemon zest, grated
- mint leaves torn

Add pizza dough ingredients to TM bowl and mix for 6 seconds on Speed 6
Knead for 2 minutes on interval speed
Remove dough from TM bown and wrap in Thermomat for 15 minutes
Meanwhile, thinly slice zuchinni - it is good to use a mandolin if you have one. Place in bowl and drizzle with extra olive oil
Roll out dough thinly and place zuchinni slices all over base, overlapping as you go
Sprinkle with feta, mint, chilli and lemon zest
Drizzle with olive oil
Bake in hot oven for appoximatley 15 minutes
Tip
From this ammount of dough, I made two huge pizza bases the size of a large oven tray

Yum! Made your delcious Pizza tonight. The only thing I did not put in was the lemon zest as I did not have a lemon. I was unsure of the interesting combination of toppings but I have to say it was a great!
I only made the base of this pizza and topped it with my own ingredients. It was beautiful and very filling. I made 2 huge pizzas cooked it at a temp of 220 fan forced for approx 15 mins. I also drizzled the pan with olive oil and sprinkled flour onto the tray before pressing out the dough. Yum
