Ingredients
Silverbeet and Potato Pie
- 250 g Parmesan cheese, grated
- 300 g silverbeet (stems removed)
- 600 g potatoes cubed
- 1 onion, optional
- 250 g cream cheese cubed
- 2-3 eggs, lightly whisked
- dash Milk
- 1 tsp grated nutmeg
- 1 tsp mixed herbs, dried
- 20 g olive oil
- to taste Salt and pepper
- 2 scoop cornflakes or weetbix or breadcrumbs

Cut the parmesan into 2 cm cubes and grate 10 secs, spd 10. Mix with the cornflakes and set aside.
Add 500 ml water to TM bowl and place potatoes in simmering basket or varoma to steam - 12 Mins, Varoma, Spd 4 or until tender. Set aside to cool.
Place silverbeet stems and onion/garlic (if using) into TM bowl and chop for 5 Secs, Spd 5.
Add EVO and saute 3 Mins, 100 Spd 2.
Tear or chop silverbeet to smaller portions and place in TM bowl and chop 5 Secs, Spd 4. Check that silverbeet is chopped, may need to scrape sides and give another quick chop.
Add cooked potatoes, eggs, cream cheese, nutmeg, mixed herbs and salt and pepper. Stir 5 Secs, Reverse Spd 1-2.
Pour the mixture into a lightly greased oven dish.
Sprinkle with the topping.
Bake at 180C for 30-40 mins.

This recipe is very forgiving and ingredients can be interchanged. I often use kefir cheese or yoghurt cheese in place of cream cheese. I add in feta or blue cheese for extra taste to the pie. Less potato more greens. Different dried herbs or fresh herbs. Adaptable.

I made this tonight - DELICIOUS! But I made some changes to the recipe:
I put less than half of the parmasen cheese, didn't put any eggs in at all and no stalks as mine were yuk looking. I'd also recommend putting the cream cheese in first when you're 'adding everything else' near the end, that helps mix it up. I love garlic and added heaps to it. Not sure what the dash of milk was for, maybe the top? But it didn't need it. I used gf bread crumbs.
It really is a forgiving recipe, I think it would work well with all sorts of greens - like broc, zuchinni etc as well as the spinach. Here is a pic of mine:
