Ingredients
Sweet steamed rhubarb with goat's cheese
- 350 g rhubarb, cut into 8-10cm lengths
- 40 g honey, plus extra to drizzle
- Zest of 1/2 orange, grated
- 2-3 cm fresh ginger, to taste, peeled, grated
- 1-2 pinches ground cinnamon
- 500 g water
Assembly
- 4 slices fruit bread, thickly sliced (see EDC)
- 100-150 g goat's cheese, to spread
- Pistachio and oat granola, see tips for link to recipe

Place 500 g water into mixing bowl. Line Varoma dish with a large piece of wet and well wrung baking paper. Place rhubarb pieces on top of baking paper and drizzle with 20 g of the honey, orange zest, ginger and cinnamon. Place Varoma into position and steam 10-13 min/Varoma/speed 2, or until rhubarb is tender.
Set cooked rhubarb aside in a bowl, drizzle remaining 20 g honey over the top and allow to cool while you make the granola.
To serve, lightly toast fruit bread, spread each slice with goat's cheese, top with rhubarb, sprinkle over a little pistachio and oat granola and drizzle with extra honey, if desired.

· Left over pistachio and oat granola can be stored in an airtight container and added to yoghurt and fruit at breakfast or used as a base for homemade granola bars.
