Ingredients

vegan chickpea loaf

  • 500g Canned Chickpeas, 2 cans drained although i cook fresh
  • 100g carrot
  • 150g green or red pepper
  • 90g onions
  • 120g breadcrumbs, i used 2 sices stale sour dough
  • 30g white chia seeds, or black
  • 1tsp garlic
  • 60g tomato paste
  • 40g soy sauce
  • 1tsp chilli flakes optional
  • 1 salt pepper to season

topping

  • 2 Ripe Tomato
  • 30g pepitas

Recipe's preparation

    vegan chickpea loaf
  1. set oven 180 and line a loaf pan with greaseproof paper

    put carrot/pepper/onion/chop 3secs speed4 scrape down add breadcrumbs/30g chia/garlic/tomato paste/soy/chilli flakes/season with salt and pepper mix rev/speed 3 few seconds till combned
    now add cooked chickpeas and mix on rev for 2 second/rev speed 3 ,i then used spatula to combine further you dont want mush but if needed mix further till combined i used spatula
    now put into tin and press down
    top with sliced tomato cook for 30mins then sprinkle with pepitas and cook further 30mins
    leave in tin to cook before you slice id say will be better to slice next day,it would be nice served cold with salad
