Recipe's preparation

    Tortellini - chese
  1. Place the flour and a pinch of salt in the Thermomix bowl. Mix for 10 seconds at speed 5. Blend"Blend"
  2. Remove the pasta from the Thermomix bowl, wrap it in plastic, and let it rest for about 30 minutes at room temperature.
  3. While the dough is resting, prepare the filling. In the Thermomix bowl, combine the ricotta cheese, grated Parmesancheese, egg yolks, salt, pepper and a pinch of nutmeg (if desired.). Mix for 20 seconds at speed 3 or until ingredients are well-combined.Blend"Blend"
  4. Roll out the pasta dough. Divide the rested dough into smaller portions. Roll out one portion of a dough at a time on a floured surface until it's thin and almost translucent.
  5. Form the tortellini. Use a round cutter or a glass to cut out circles from the dough. Place a small amount of filling in the center of the circle. Fold the circle in half creating a half-moon shape and press the edges to seal. Bring the two corners of the half-moon circle together, overlapping them slightly to form a tortellini shape. Press to seal.
  6. Repeat the process with the remaining dough
  7. Cook the tortellini in boiling water for 2-3 minutes or until they float.
  8. Serve your homemade tortellini with your favorite sauce or sage and butter.
