Ingredients

Rice

  • 350 grams Aborio Rice

Sauce

  • 2 cloves garlic
  • 1 onion brown, halved
  • 30 grams olive oil
  • 1000 grams water
  • 1 teaspoon salt
  • 1 can diced tomatoes, 400g
  • 170 grams spanish chorizo, sliced
  • 80 grams Mushrooms sliced
  • baby spinach, good handful
  • 700 grams chicken breast, diced

Recipe's preparation

    Sauce
  1. Place onio, garlic and oil in bowl, 4 Sec, Speed 5. MC on. 

    Scrape down sides. Add oil, 5 min, 120 heat, Speed 1. MC on. 

    Add chorizos and can tomatoes. 6 min, Varoma Speed 1. MC on. 

    Add Salt, chicken and 700grams water. 4 minutes, 100 heat, reverse Speed 0.5 MC on. 

    Add remaining 300grams water and aborio rice. 18 min, 100 heat, reverse speed 1. MC on. Once it started to really boil I replaced MC with basket as the lid. This prevented extra splatter. 

    At around the 15 minute mark remove basket and add mushrooms gently using spatula stir through. Place basket back on till end. 

    Place into thermoserver, stir through spinach leaves as they wilt with the heat and allow to rest for 5 minutes. 

    Serve with Parmesan cheese (options) or fresh chilli flakes for a little added heat.

    Great recipe -

    Like others I had to reduce the liquid quantity so that it fit in the TM bowl. I would say 500ml liquid total is plenty. I used 350-400g water at first stage and then added about 100g white wine with the rice. Upped the garlic (! only to three), and added a drop or two of Thyme essential oil after the mushrooms too (no fresh, worked fine). Nice to have a good tomato risotto version. Great work on detailing your work.

    Love this recipe, I made the changes the others suggested (less water, added wine and chicken stock) and added some zucchini for some extra veg for the kids.

    This meal was absolutely delicious, I added chicken stock instead of water and some wine as well, but if I'd added 1000 ml of chicken stock, it would've overflowed. I think these measurements must be incorrect. I didn't add the full amount of chicken and the thermomix was almost overflowing and I didn't add the full amount of liquid.

    I would've added 500 ml chicken stock and 200 ml white wine...
