Ingredients

Chicken & Sweetcorn Risotto

  • 1 brown onion, quartered
  • 2 garlic cloves
  • 20 g Butter
  • 2 skinless chicken thighs, cut into cubes
  • 150 g arborio rice
  • 400 g water
  • 2 heaped tsp Vegetable stock paste
  • 60 g frozen corn kernels
  • 50 g Strong cheddar cheese
  • 1 level tbsp fresh chives, chopped
  • 3 bacon rasher, rindless, chopped (optional)

Recipe's preparation

  1. 1. Place onion, garlic and butter into bowl and chop, 3 sec/speed 7. Scrape down the sides.

    2. Sauté 2 mins/100/speed 1. Add chicken, bacon and rice and cook 5 min/100/Reverse/speed 1. Scrape down sides of bowl.

    3. Add water and stock paste 12 mins/90/Reverse/speed 1. Add corn, cheese and cook 5 min/90/Reverse/speed 1.

    4. Add chives and mix 3 sec/Reverse/speed 1.

    5. Pour into a Thermo Server and allow to sit for 5 mins before serving.

Tip

Note: This is an adaptation from Louise Fulton Keats "Thermomix Cooking For Baby & Toddler".

This makes 2 generous adult portions or 4 kiddie portions.

This can also be made in either TM31 or TM5.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    This was quite tasty. Although I think next time I would add the bacon at the same time as the chicken. The bacon didn't really cook. I think I'd also use the butterfly whisk to ensure that everything was mixed through properly as the corn sat at the top at the final cook and I had to mix it through by hand and put it back on for 2 more minutes.
