Ingredients

  • 1 onion, (quartered)
  • 3 cloves garlic, (or to taste)
  • 2 Red Birdseye chillies - reduce amount or de-seed if you do not like it too spicy
  • 15 g olive oil
  • 200-400 g chicken thigh fillet, (chopped)
  • 250 g Philadelphia Cream for Cooking
  • 2 tablespoons Pesto
  • 2 tablespoons Vegetable Stock Concentrate (EDC)

Pasta Ingredients

  • 400g approx, dry pasta
  • 1200 g water
  • 1 tablespoon olive oil
  • salt, (to taste)

Recipe's preparation

    Sauce
  1. Place onion, garlic and chillies into mixing bowl 5 Sec/Speed 5.

    Scrape down bowl with spatula, add olive oil and saute 3 Mins/100C/Gentle stir setting"Gentle stir setting" with MC off.

    Add chicken and cook using butterfly accessory for 15-20mins/100C/Speed 1Counter-clockwise operation"Counter-clockwise operation" .

    Scrape down bowl with spatula, add cream, pesto and vegetable stock and cook for 3 Mins/90C/Counter-clockwise operation"Counter-clockwise operation" /Speed 1.

  2. Pasta
  3. Place water, olive oil and salt into mixing bowl and bring to boil, 8-10 Mins/100C/Counter-clockwise operation"Counter-clockwise operation" /Speed 1 with MC removed and simmering basket on top of lid.

    Add pasta and cook for 8-12 Mins/100C/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" - Speed 1 with MC removed and simmering basket on top of lid

Tip

For extra spice add 1/2 a teaspoon of chilli oil or more birdseye chillies, with or without the seeds

Chicken may be substituted for other meats, however this will change the cooking time.

    I was gifted a big bunch of basil so I made pesto and then cooked this for dinner. Wow! Really tasty and so easy. I used 3 cayenne chillies and it was just enough heat. Thanks for a great recipe.

    Hi, I was just wondering are we supposed to leave the previous (sauce) ingredients in the bowl when adding the water for the pasta? and for the rest of the recipe? Or is the pasta cooked separately to the sauce? Thanks

    Absolutely loved this recipe , as did the teens. Very quick and easy. Served fresh chopped chillies on the side instead of in the cooking so children could eat as well. Definitely will cook again 😊

    This was very yum, added cracked pepper and parmesan at serving, loved the chilly, will add some bacon or chorizo as well next time for some variation 😊

    Sensational... whole new meaning to 'lick the bowl' only used half the cream, still sensational....

    Very tasty, rich but definitely worth making.

    I think the chicken was chopped up to much by the blades, next time I'd cook the chicken with the butterfly.

    Instead of using pasta, this recipe would be a good filling for chicken pies & volovants etc
