Ingredients

Pasta

  • 400 g Flour, bakers
  • 4 Eggs.
  • 1 pinch salt

Filling

  • 500 g green prawns, Peeled, Deveined, Tails removed
  • 1 tablespoon chives fresh
  • 1 egg white
  • 350 g cream
  • 1 egg, Lightly Beaten

Sauce

  • 80 g Butter, Cubed
  • 1 clove garlic
  • 15 g basil, Leaves Only
  • 40 g pinenuts

Recipe's preparation

    Pasta
  1. Add all ingredients to bowl. Mix for 5 sec speed 5.

    Knead for 3 mins[Closed lid"Closed lid" Dough mode"Dough mode"

    Tip dough on to thermomat or board, roll into a ball, wrap in plastic, rest for 30 mins.

  2. Filling
  3. Add prawns, chives and egg white to bowl, mix for 20 sec, speed 5, while blade is turning, add cream in slow stream.

    Place mixture into bowl, cover with glad wap and refrigerate for 30 mins.

     

  4. Sauce
  5. Place garlic in bowl, chop for 10 sec, speed 5.

    Add basil, chop for 5 sec, speed 3.

    Turn to speed 1.5, add butter through hole.

    Cook Varoma, speed 2 for 5 mins, without MC. 

    Add pinenuts, stir Counter-clockwise operation"Counter-clockwise operation" , Varoma, speed 1

  6. Preparation
  7. Roll pasta to 2mm thickness, cut into 7cm circles, place 2 - 3 teaspoons filling in centre of cirlce, brush edge with lightly beaten egg and place another circle of pasta on top, press edges together so they are secure.

    Cook ravioli in large pot of salted boiling water, making sure not to overload pot or they will stick together.

    Drain ravioli and divide evenly between 4 serving bowls.

    Pour sauce over ravioli, toss lightly, serve immediatley.  

Tip

To save time, you can use 200g pack of wonton wrappers instead of making pasta.
