Ingredients
Chorizo Fettucini with Spinach, Parmesan & Lemon Herb Butter
- 25 Parmesan cheese
- 25 g parsley
- 1 onion, cut in to quarters
- 1 garlic clove
- 1 chorizo sausage, cut into 4 thick slices
- 200 g spinach
- 1200 g water
- 20 g Butter
- 1 lemon
- 20 g olive oil, for sautéing
- 1/2 level teaspoons salt, for pasta water
- 200 g Fettuccine

- 1. Place parmesan cheese & parsley in mixing bowl & grate/chop for 8 sec, speed 9. Set aside.
2. Chop garlic & onion for 3 sec, speed 8. Scrape down bowl.
3. Add chorizo and chop again for 5 sec, speed 5. Scrape down bowl.
4. Add olive oil & sauté for 4 minutes, 100C, speed 1.
5. Add spinach & stir for 1min "Counter-clockwise operation" speed 1. Transfer to a heat proof dish or Thermoserver.
6. Rinse bowl & add water plus optional 1/2 teaspoon salt in to mixing bowl. Bring to boil 10min, 100C, speed 1.
7. Add fettucine through hole in mixing bowl lid & cook to time indicated on package at 100C "Counter-clockwise operation" speed 1 without measuring cup until al denote.
8. Drain pasta & add to thermal serving bowl with chorizo. Toss to coat fettucini.
9. Place thermal bowl on top of lid & weigh in pieces of butter, add the reserved Parmesan and parsley and stir through.
10. Season to taste with salt & pepper & a squeeze of lemon juice.

Tip
* I've sometimes used pre grated parmesan cheese but still put in to bowl with parsley for 4 seconds, speed 6.
* Use as much salt & pepper to season as you like to suit your taste preference. Lemon juice too is a seasoning in this dish & will help to bring out the flavours.
* The spinach will continue to wilt whilst in the thermoserver so don't over cook before adding.
* Double the recipe for more people but TM31 users should check bowl size OK for pasta quantity.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
