Ingredients

Creamy Chicken Soup

  • 40g parmesan, cut into 3cm blocks
  • 6-7 stalks fresh parsley, leaves only
  • 2 level tbsp olive oil
  • 2 celery stalks, cut into 2-3cm pieces
  • 2 carrots, peeled and cut into 2-3 pieces
  • 1 brown onion, cut into quarters
  • 750ml liquid stock, chicken or veg, see tips
  • 300-350g chicken breast or thigh, cut into 3cm pieces
  • 160g cream cheese, room temp
  • 250g Elbow or Macaroni pasta
  • 120g Fresh Baby Spinach
  • 1 tsp Dijon mustard

  2. Add Celery, Carrots and Onion

  3. Add Oil and cook
