Ingredients
Meat sauce
- 250 g pork mince, (or sweet Italian sausage w/out skin)
- 250 g Beef mince
- 1/2 onion
- 2 carrots
- 1 stick Celery
- 2 cloves garlic
- 30 g olive oil
- 140 g tomato paste
- 400 g can tomatoes
- 205 g tomato passata
- 1/4 Cup water
- 2 tsp white sugar
- 1 cube chicken stock, (or TM chicken stock paste)
- 1/2 tsp Oregano
- 1 1/2 tsp dried basil
- 1/2 tsp fennel seeds, whole
- 1/4 tsp Thyme
- 1/4 tsp rosemary
- 2 tsp salt
- 1/4 tsp ground pepper
- 2 tablespoon fresh parsley, chopped
- Lasagne sheets
Cheese sauce
- 500 g ricotta cheese, full cream
- 1 egg
- 1 tsp salt
- 2 tablespoon fresh parsley, chopped
- 175 g Mozarella Cheese, sliced
- 100 g cup Grated Parmesan Cheese

Grate your parmesan cheese 10 sec/ Speed 8, set aside.
Chop carrots, celery, onion & garlic 5 sec/speed 5, scrape bowl.
Add oil & saute 2 min/ Varoma/ speed 1
Add meat, cook for 5 min/ Varoma/ "Counter-clockwise operation" /"Gentle stir setting"
Add the rest of the meat sauce ingredients into the bowl, then cook 20 min/ 100°/ "Counter-clockwise operation" / speed 1.5
In a separate bowl, mix all cheese sauce ingredients except Grated Parmesan and Mozarella cheese.
Start off building your lasagne with a 5th of the meat sauce then repeat the following layers:
1) Lasagne sheet
2) Cheese sauce (ricotta)
3) Meat sauce
4) Mozarella
You should end the lasagne in this order, then top it with your parmesan cheese.
Cover the casserole with foil, bake in 180º C oven for 30 min, remove foil then bake another 10 min.

Tip
If your cheese is not nicely melted/golden brown, use your grill setting to grill the cheese (3 min at 210°C - use discretion).
Let the lasagne stand for 10 minutes so that it builds some structure, and doesn't fall apart when you're cutting it.
