Ingredients

Tomato, Bacon and Spinach Risotto

  • 40 g Parmesan cheese, cubed (3cm)
  • 190 g brown onion, halved
  • 2 garlic cloves
  • 15 g extra virgin olive oil
  • 385 g arborio rice
  • 800 g cold water, divided (200g+600g)
  • 4 tbsp Vegetable stock paste
  • 150 g bacon, diced
  • 400 g tomato, tinned
  • 2 tsp dried italian herbs
  • 80 g tomato paste
  • 80 g Fresh Baby Spinach

Recipe's preparation

  1. Place parmesan in bowl. Mill 10 seconds/Speed 10/MC on. Set aside.
  2. Place onion and garlic in bowl. Chop 3 seconds/Speed 5/MC on.
  3. Add oil. Saute 3 minutes/120 degrees/Speed 1/MC on.
  4. Insert butterfly whisk.
  5. Add rice. Cook 1 minute/120 degrees/Speed 1.5/MC off.
  6. Add 200g water. Cook 2 minutes/Varoma/Counter-clockwise operation"Counter-clockwise operation" Speed 1.5/MC off.
  7. Scrape bowl with spatula to loosen rice.
  8. Add stock paste, bacon, tinned tomatoes, mixed herbs, tomato paste and remaining water, then scrape bowl to loosen rice again.
  9. Cook 13 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" Speed 1.5 with simmering basket on lid instead of MC.
  10. Transfer to Thermoserver, add parmesan and baby spinach. Rest for approximately 10 minutes before serving to allow to thicken.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
