Ingredients

Very veggie pasta sauce

  • 1 brown onion, halved
  • 2 tsp Minced garlic, or 2 garlic cloves
  • 20 grams olive oil
  • 500 grams mixed vegetables, I use 1 carrot, 2 sticks celery, 1/2 a capsicum, 2 large mushrooms and a zucchini all roughly chopped
  • 1 tbsp Vegetable stock paste
  • 100 grams tomato paste
  • 400 grams canned diced tomatoes, or tomato passata

Recipe's preparation

    Sauce
  1. Put onion and garlic in bowlClosed lid"Closed lid" , speed 6, 3 secs, scrape down inside bowl.
  2. Add olive oil and saute. Varoma, speed 1, 3 mins.
  3. Add in all roughly chopped vegetables and chop on speed 5 for 5 sec, scrape down bowl and chop again if required (if you want to hide the veggies, another 5 sec). Saute further - Varoma, speed 1 for 5 mins.
  4. Add in canned tomatoes/passata, paste, stock. Cook for 10 mins, 100 deg, speed 2.
    Serve.

Tip

This pasta sauce is very forgiving. Use whatever vegetables you have on hand!
Serve with pulse pasta, regular pasta, zoodles or meatballs.
Freezes well for a super quick meal.
