Ingredients
Zucchini, Pea and Bacon Risotto
- 40 g Parmesan cheese, cubed
- 1 small zucchini, chopped into 4 pieces
- 1 brown onion, quartered
- 2 cloves garlic
- 150 g shortcut bacon rashers
- 20 g Butter
- 20 g extra virgin olive oil
- 320 g arborio rice
- 2 level tbsp Vegetable stock paste
- 720 g water
- 160 g frozen peas

- Place parmesan cheese into TM bowl and grate for 10 seconds/speed 10. Set aside in Thermoserver.
- Place zucchini in TM bowl and chop for 10 seconds/speed 5. Set aside in separate bowl.
- Place onion, garlic, and bacon in TM bowl and chop for 5 seconds/speed 5. Scrape down the sides of bowl. Add butter and olive oil and cook for 3 minutes/120 degrees/"Counter-clockwise operation" speed 1. MC off.
- Insert butterfly into TM bowl. Add arborio rice and cook for 1 minute/120 degrees/"Counter-clockwise operation" speed 1.5. MC off. Scrape down the sides and base of bowl using spatula.
- Place reserved zucchini, including all the liquid, into TM bowl. Cook for 2 minutes/Varoma/"Counter-clockwise operation" speed 1.5. MC off. Scrape down the sides and base of bowl using spatula.
- Add stock paste and water to TM bowl. Cook for 12 minutes/100 degrees/"Counter-clockwise operation" speed 1.5 with simmering basket on top of lid instead of MC.
- Add peas to TM bowl. Cook for 2 minutes/100 degrees/"Counter-clockwise operation" speed 1.5 with simmering basket on top of lid instead of MC.
- Pour the risotto on top of reserved parmesan cheese in Thermoserver and stir to combine. Let sit for 5 minutes before serving.
