- Salt & pepper to taste
- 1-heaped tsp Dijon mustard
- 1 tbsp white vinegar
- 250 g avocado, oil

Place garlic into TM bowl (if using) and chop on speed 7, you will hear when its done.
Insert butterfly. Add whole egg, salt, pepper and vinegar. Mix for 1 minute, 37°C on speed 4.
With the blades rotating on speed 4 and the MC in place slowly pour all the oil onto the lid. (note: the blades must be turning before you begin to add the oil) The oil will take about two minutes to drizzle into the bowl.
A little oil will still be on the lid - keep mixing while scraping the oil into the hole with the spatula. There will be some splatter on the inside of the lid, scrape this into the bowl and mix through on speed 2 for a couple of seconds.
Keep refrigerated.
Tip
To stop the MC from lifting lay the handle of the spatula along the top of the MC, the safety collar sits in the oil – this will ensure a steady drizzle of oil into the bowl and reduce splatter.
I always use large or extra large eggs when making mayo to avoid splitting (you could use two small eggs). If your mayo does split don’t throw it out: start again with the egg etc and use the split mayo instead of oil.

This has been a favorite for over a year! Ive made it weekly with only 2 failures ever ( which i use to make the next batch). I use grapeseed oil instead of avocado oil and always add a dollop of honey and wholegrain mustard.
Delicious mayo,I used lemon juce instead of the vinegar and added more hot english mustard.It really has intense flavours and goes beautifully with chicken.Highly recommend this recipe!
