Ingredients
Béchamel (White) Sauce
- 35 grams white onion, Chopped
- 15 grams garlic, Chopped
- 500 grams whole milk
- 10-12 white peppercorns
- 50 grams Butter
- 30 grams plain flour
- .25 teaspoon salt, to taste
- .25 teaspoon white pepper, to taste

Chop onion and garlic 1 Second, Speed 7
Scrape down.
Combine milk and peppercorns to onion and garlic and bring to a boil, 6 Minutes, 100C, Speed 1.
Set aside.
Rinse bowl
Melt butter 3 Minutes, 100C, Speed 1.
Stir in flour, 3 Minutes, 100C, Speed 1.
Add the milk mixture, straining through simmering basket and discarding the solids.
Simmer, until thickened, 6 to 8 Minutes, 90C, Speed 4.MC off, Simmering Basket on.
Turn off the heat and season with 1/4 tsp each salt and pepper or to taste.

Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.
We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml.
All herbs are fresh (unless specified) and cups are lightly packed.
All vegetables are medium size and peeled, unless specified.
All eggs are 55-60 g, unless specified.

I made this sauce & while boiling the milk it overboiled & went all through my thermo
I love this sauce a family favorite in my house
So good and easy....my mum rang me and asked me to make her the "machine " white sauce!!!
