Relish
- 400 g raw beetroot, rinsed & scrubbed, roughly chopped
- 180 g green apple, cored & quartered, 1 large
- 1/2 red onion
- 120 g white wine vinegar
- 120 g balsamic vinegar
- 120 g brown sugar
- 1/2 lemon, juiced (no pips)
- 1/2 teaspoon Dijon mustard
- 20 g oil
- 1 teaspoon cinnamon
- 1 teaspoon Nutmeg

Place beetroot, apple, and onion into the mixing bowl and chop 7sec / SP 4. Scrape down sides of the bowl.
Add remaining ingredients and cook 30 mins / Varoma / "Counter-clockwise operation" / "Gentle stir setting" with MC off and TM basket on the mixing bowl lid
Allow to cool slightly, place into sterilised jars and store in the refrigerator.

Quite nice. We halved the cinnamon and the nutmeg and still found these flavours a bit strong as they masked the taste of the beetroot. Thank you for the recipe. We will try again.
we love this relish... and can easily devour a whole jar of it as a vegetable side with our dinner! And so easy to make... I'll definitely be making this again and again!

Soooooooo good. What an amazing way to use up some beets that had gone soft in the veg drawer! Used red wine vinegar instead of white, and a shallot, as they were all I had. Like others said, just copped the beet onion and apple a little longer than the recipe said. Makes a lot of chutney, but awesome with bickies and cheese!
How long will this keep?
Great tasting recipe Aileen. Looked through comments & used advice of 1/2 sugar & chopping longer on bit higher speed. Recipe made 2 x 300ml jars. I'm about to start another batch today. Thanks so much, we love it!

I made this again tonight. I love it. I used the turbo a few times on the beetroot mix before cooking. I put just a little more than half the sugar amount.
