  • 180 grams double thickened cream
  • 60 grams good quality Blue Cheese, crumbled or diced

Recipe's preparation

  1. Chop onion 5 sec / speed 7. Scrape the sides of the bowl.

  2. Add butter and caramalise onion 10 mins / 120oC / Counter-clockwise operation"Counter-clockwise operation" / speed 2 – MC OFF (For a TM31 – set temperature to Varoma).

  3. Add cream and simmer 5 mins / 80oC / Counter-clockwise operation"Counter-clockwise operation" / speed 2 – MC OFF

  4. Add crumbed cheese to the bowl. To melt and reduce the sauce, continue cooking 8 mins / 80oC / Counter-clockwise operation"Counter-clockwise operation" / speed 2 – MC OFF. 

  5. Pour sauce into a ThermoServer to naturally thicken for about 5 minutes prior to serving.

Tip

Amazing over steaks and vegetables. This serves 4-6 generous helpings.

    Really lovely. Boyfriend and i both loved it. I added 70g of blue vein cheese and 200g of onion. It has a nice hit of blue vein but not overwhelming, just enough to taste it. Beautiful recipe. I made one small jar with a little left over- potentially makes two small jars tmrc_emoticons.-)

    This was an awesome sauce!  My husband doesn't like blue cheese (I do) and we had some leftover that I wanted to use up so made this up to go on some steak.  We both loved it ... yum!!

    Delicious sauce. We had leftover blue cheese & it was husbands birthday today. 3 ticks! Perfect sauce to accompany flinstones cooked on the bbq.

    For every TM recipe i always chop the onions less as i find the onion taste can be overpowering otherwise.

    I cooked this in the tm31.
