Ingredients
- 140 g soy milk
- 2 teaspoon Dijon mustard
- 1 teaspoon honey, (Optional, can omit if preferred)
- 2 teaspoon vinegar, (I prefer Rice Wine or White Balsmic, but any white vinegar will work)
- 250 g Avocado Oil, (Macadamia or other light tasting oil would work. Olive oil may taste too strong for this recipe)
- salt, to taste

Insert Butterfly.
Add Soymilk, mustard, honey if using, and vinegar to bowl.
4 min/37c/Sp4/MC on
Scrape down bowl.
7 min/37c/Sp4/MC On.
While machine is running, slowly drizzle oil onto lid allowing it to run slowily inside. Increase time as needed until fully incorporated and emulsified.
Season to taste.
Chill in fridge until using.

Tip
This mayonnaise is light and creamy, it makes a perfect mayo for coleslaw or other salad dressings.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

I just tried a recipe using aquafaba instead of soy but it didn’t whip up. Tasty but runny. I will try this next time.
