Ingredients

Bolognaise Sauce

  • 80 g celery stalks
  • 1 carrot, roughly chopped
  • 1 onion, quartered
  • 1-2 garlic cloves
  • Few Oregano leaves
  • few basil leaves
  • 50 g oil
  • 200 g Beef, minced (made in TM)
  • 200 g Pork, minced (made in TM)
  • 1 fresh Bay Leaf
  • salt to taste
  • Pinch nutmeg
  • 70 g red wine
  • 70 g water
  • 150 g tomato paste
  • 200 g tomato puree

Recipe's preparation

    Method
  1. Place celery, carrot, onion, garlic, oregano and basil into mixing bowl and chop 5 sec/speed 7.

  2. Add oil, minced beef and pork, bay leaf, salt and nutmeg and cook for 10 min/Varoma temp/Counter-clockwise operation"Counter-clockwise operation" Reverse/Gentle stir setting"Gentle stir setting" speed soft, placing basket instead of MC onto mixing bowl lid.

  3. Add remaining ingredients and cook 20 min/100 C/Counter-clockwise operation"Counter-clockwise operation" Reverse/Gentle stir setting"Gentle stir setting" speed soft, again placing basket instead of MC on top of mixing bowl lid.

    Serve on a bed of cooked pasta.

Tip

If mincing meat in TM31, mince before commencing recipe. Never over-process; best minced by pulsing the Turbo button a few times until coarse or desired texture is reached.

When using pre-minced meat try to buy coarsely ground rather than the finer texture.

For a richer flavour, increase amount of tomato paste and reduce tomato purée.

    great taste, i make slight changes: I add 1/2 tbsp veggie stock, add one small zucchini (skin peeled) and ommit the water as the veggies produced enough liquid IMO. served over pasta cooked in Thermoserver. Very easy and versatile meal....

    I chopped my vegies on speed 5 and used the butterfly as suggested.  Great outcome, nice texture and heaps of flavour.  Thanks for the tips and the recipe

    I agree with Kateris, I did not like the texture of this at all.  Was fine for the kids but while I have my own teeth I prefer to chew my food  tmrc_emoticons.;)  I did like the flavour though.

     

    I will try CathyM's suggestions next time and hope for a less pureed texture.  tmrc_emoticons.)

    Really did not like this at all. Much better on the stove. Watery, the consistency of the sauce was awful. Will not be making this again.

    Hi Rebecca, dont give up on it. try chopping your veggies on speed 5 for a chunkier result. Try using the butterfly while cooking if you like chunks of mince instead of pureed mince. Thats how i do mine and it works well. if you dont want to stew your meat just leave the measuring cup off and place rice basket on top if it splatters.

    I made this last night, without the carrot and red wine, I used 20g of red wine vinegar instead and added a tbsp of veg stock paste and a splash of Worcestershire sauce, and tinned diced tomatoes instead of puree. I think doubling the recipe wouldn't fit in the jug? My toddler gobbled it up and my husband loved it too. I used 400g of topside beef (no pork) and minced it roughly with the turbo button and cooked at 100, not Varoma temp (a tip I picked up online) It was very easy and very yummy.  Cooking 9

    Im new to thermomix, but this didn't work well for me. I'm guessing for a variety of reasons:ie I tried to double recipe, and it stewed, and I chopped veg for too long(they were almost puréed). My kids love bol sauce and I think for me it works better in a fry pan with hand chopped vegtmrc_emoticons.( 

    I will definitely continue making the tomato purée in thermietmrc_emoticons.)
