- 1 Granny Smith Apple
- 2 Limes, peel zest and reserve rest to juice into bowl
- 600-800 g raw sugar
- 1000 g water

Fit peaches in steamer basket and Varoma. Pour 1L water in Thermomix bowl. Fix lid and Varoma. Select Varoma temperature, 20 minutes, Speed 2. Check peaches are softened and skin can be removed easily. If not, cook for a further 5 minutes. Peel peaches and remove stones. Reserve cooking water for coloured jellies.
Quarter apple (keep core, remove stalk). Add apple and lime zest to bowl and blitz on Speed 9 for 10 seconds. Scrape down sides and if consistency not fine enough blitz again for another 10 seconds."No counter-clockwise operation"
Press scales button and weigh in peach flesh and juice of the 2 limes. Add sugar of same weight as peaches and juice. Select Varoma temperature, 25 minutes, Speed 2. Place jars in Varoma and steam/sterilise while jam is cooking. Place saucer in fridge to test jam setting once cooked.
Check jam sets by spooning a little on the chilled saucer. It should take a few seconds to set. If its not ready it will run all over the place. If it isn't setting cook for a further 10 minutes and check again. Once setting readily, decant to sterilised, warm jars.

The peach coloured water from steaming the peaches is perfect for Turkish Delight - no need for food colouring.

Hi, thanks for this recipe. Have made it three times so we can have a reasonable supply when peaches are finished. It is so good. Also made the jelly from the steaming liquid , wonderful! Very easy !
