Ingredients

Peanut Satay Sauce

  • 1 tablespoon peanut oil
  • 2 cloves garlic, Peeled, Whole
  • 80g small pieces brown onion, cut into quarters
  • 2 small piece red chillis, fresh, Seeded
  • 1 stalks lemon grass (white parts)
  • 180ml coconut milk, Lite can be used
  • 2 level tablespoon fish sauce
  • 120 grams crunchy peanut butter
  • 100 grams firmly packed brown sugar
  • 1/2 level teaspoon curry powder (to taste)
  • 1 tablespoons lime juice, squeeezed

Recipe's preparation

  1. Put Onion, Chilli, garlic and lemongrass into bowl, with lid and MC in place,blitz for 5 secs, speed 7, scrape down bowl and repeat if necessary.

  2. Add peanut oil and cook for 4 mins, Varoma temp, speed 1

  3. Add remaining ingredients and cook for 20 mins,100 deg, with MC off.

Tip

I have adapted this recipe from the Women's Weekly Thai Cookbook. There is a lot of oil when the sauce sits for a while, you can pour off the excess oil as it cools.

    This is great! Have used on pizzas and also used as a stirfry sauce. I find it better without the lemon grass

    This is probably my favourite satay sauce I have had EVER! Would definitely reduce the sugar and I gave it an extra blend at the end to get a smoother consistency. Thankyou tmrc_emoticons.)

    Makes a beautiful satay sauce. Maybe a little bit too sweet for my taste but I will just reduce the sugar next time.

    Delicious! I have made this a couple of times now. I have reduced the sugar also and use my own TM peanut butter to reduce it further. The whole family - even those who don't normally like 'spicy' - have given it the thumbs up!

    So easy and tasty...I did fid it a tad sweet and will reduce the sugar next time but still a winner... Thank you!
