Ingredients

Pear Paste

  • 4 --- pears, peeled and cored
  • 100 grams water
  • 1 --- freshly squeezed lemon juice
  • 600+ grams sugar

Recipe's preparation

  1. Cut Pears into chunks and add to TM bowl.

    Add water and Lemon Juice

    Cook on 100 C Spd 1 for approx 30 mins or until Pear is soft

    Puree mix on spd 8 for 15sec

    Remove pulp from bowl and activate the scales to weigh the pulp back into the TM

    Add 3/4 weight in sugar and cook for 1.5hrs on 100c spd 1.5 with the MC off and place simmering basket on top of lid instead

    For a darker colour or firmer consistency, continuw to cook for 30mins varoma temp spd 3

    Pour into lined tray or individual cups and store in fridge

    Keeps indefinately

Tip

If you were pressed for time, then gelatine or agar agar can be added to aid the firming process rather than cooking longer

    I made fig and pear paste by adding four figs taste great just needed to cook a little longer as it didn't quite set
