Recipe's preparation

  1. Add cleaned plums and water to the bowl.

    Cook 20 min/100C/ Counter-clockwise operation"Counter-clockwise operation" 2 with the steaming basket on the lid. The skins should be broken and flesh starting to come away from the stones.

    Allow the cooked plums to cool to around 70C.

    Deflesh the fruit 20 sec/ Counter-clockwise operation"Counter-clockwise operation" 3, MC on.The stones will rattle around in the Closed lid"Closed lid" .

    Separate the stones by transferring everything into another bowl and then carefully tipping jam pulp back into the Thermi Closed lid"Closed lid" , leaving the stones behind.

    Add the lemon juice & pulp and sugar to the Closed lid"Closed lid" bowl.

    Cook for 30 min/100C/Counter-clockwise operation"Counter-clockwise operation" 2. Cover with the steaming basket. Watch for excessive frothing.

    Test the jam to see if it is sweet enough. Add sugar if necessary.

    Cook for a further 10 min. Test for setting by putting a teaspoon of jam on to a saucer and cooling in the fridge for a few minutes and making sure there is no free running liquid.

    If more cooking is required for the desired set cook in 10 min time blocks 100C/Counter-clockwise operation"Counter-clockwise operation" 2.

    Transfer the jam to sterile jars when hot and seal with the lid immediately.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    The quantity of water in this recipe is too much - way too runny.

    Delicious plum jam! It's made easy by getting the thermie to get the stones out. Mine set beautifully. Thanks for sharing
